Let it drip dry and then you will have cream cheese & whey!<br /><br />As for making something else with the soured milk... smoothies, if you are fine with the flavor! With the mold, just wash it with hot soapy water and dry really well before putting it back on. I have kept my whey in the back of my fridge for almost a year before finishing it off.
