ReplyDeleteI've been scrolling thru the recipe book and am curious what texture changes will occur if I don't heat the milk? We prefer to preserve all the beneficial enzymes and bacteria but I'd like to acheive a better texture. We do what you're calling the fast method all the time and I love it right from the machine, but it gets too hard after being in the freezer a few hours. What temp do you heat the milk to? BTW-we use our own raw goat milk to make ice cream.
